The second half started much as the first, this time with Joe Tessem scoring for Southampton.
The Isle of Wight fought back, with Tom Mcinnes finding the net.
Next, fuelled by a penalty, Southampton FC Legends' Nicky Banger scored a fourth for his side, before a decisive fifth for Saints, by Andrew Surman.
After the match, Newport said: "What a day!
"Thank you everyone for making it such a wonderful occasion: Organisers, sponsors, supporters, especially those who travelled from the mainland, officials, and both sets of players who were class throughout."
Cowes Sports added: "We had such a great day.
"Thank you everyone for your support and for coming to Westwood Park, and congratulations Saints!"
There were thanks, too, for the St John Ambulance team, who supported the event.
