A WOMAN who relocated from South America to south of the Solent 15 years ago, is supplying the Isle of Wight with a range of nutritious, delicious takeaway meals from her home country.

For Karito Parkman, from Colombia, Karito's Kitchen has been a labour of love and patience, having joined husband Jonathan on the Isle of Wight in 2005.

Despite enjoying the English cuisine on offer, she began to miss food from her country, with authentic ingredients a struggle to find, prompting her to take up the baton and start her own company.

She said: "My husband and I both enjoy cooking, and when Jonathan was diagnosed with coeliac disease ten years ago we decided to build an extension in our house with a big kitchen to make gluten free food.

"We put the idea of selling food to one side for a little while, but often talked and planned about what to do.

"One Sunday evening in January this year, we posted asking people if anyone wanted to buy Colombian empanadas on Facebook and the response was incredible!"

A slew of positive reviews soon followed, and the couple geared up for their first festival season, only for the summer plans to be scuppered by the outbreak of Covid.

Undaunted, Karito and Jonathan invested in a food trailer and have been preparing Colombian food for Island parties and events in lieu of the big music weekends.

Orders can be made online throughout the week for collection on Friday or Saturday evenings between 5.30pm and 7:30pm.

Karito concluded: "In the future, we will have a list of places around the Island where we'll be during the day for lunch time takeaways.

"Our Colombian food uses mainly maize flour and tapioca flour, and so all our food is naturally gluten free."
